March more than got away from me – which is why it’s the first of April and I’m just now posting this strawberry lassi recipe for Food Bloggers Recipe Swap. I was paired this month with Sujitha Easy Cooking. Sujitha posts some amazing recipes – I’ll confess that I might have been a bit overwhelmed at the thought of picking just one recipe to recreate or adapt. I really wanted to make an egg dish – this Egg Bajji Curry is on my absolute must make list when I have some time. However, given that time seemed to be in short supply this month, I opted to take a look at all the lovely lassi recipes on the site.
Mango lassi has always been one of my favorite drinks, but I’d never made it for myself. Sujitha has a good looking mango lassi recipe, but then I stumbled across a recipe for strawberry lassi. Mmmmm. Strawberries are just now wandering their way up to Oregon from California. We’ve been able to pretty consistently get some organic strawberries from the local grocery. I couldn’t resist.
Lassi is a lovely combination of fruit and yogurt, with sugar and milk sometimes added. I opted to just use yogurt and fruit. Granted, I used vanilla yogurt, so there was definitely a bit of sugar already in the mix. I can’t wait to drink this with my lunch tomorrow.

Ingredients
- 1 1/2 cups yogurt - plain or vanilla
- 8 strawberries, hulled and sliced in half
Instructions
- Use a blender or immersion blender to combine the yogurt and strawberries.
- Serves 2. Enjoy!

Strawberry lassi looks absolutely tempting… haven’t had one in ages. Just the right thing needed to beat the heat.
